Australian R&D company PotatoMagic has developed a process that turns potato into a functional food base that melts like cheese when heated. The product, known as CHATO, has applications in dairy-free cheese, dip bases, mayonnaise and ice-cream.

Meet the creator of PotatoMagic.TV ... Andrew Dyhin
Andrew Dyhin is a food innovator. His current projects are focused on finding and perfecting a method to make eco friendly, healthy, innovative new food products.
From a young age Andrew knew his destiny was to become an innovator. The day he decided (as a curious four year old) to pull apart his daddy's watch taught him a lesson in persistence that he would never forget.
This natural curiosity bubbling within Andrew was even stronger in the passion that he had from his early years… a passion for potatoes! As a small child in his mother's veggie patch, nothing would inspire young Andrew more than watching his mum tend to an amazing array of glorious, fresh, earthy potatoes, and then steam them, and pop them in a pot with melted butter and chopped dill.
Many years later, while dreaming to go where no man has dared to go, Andrew continued to perform lengthy creative experiments on potatoes, and finally uncovered an exciting innovation that was to revolutionise the industry.
Currently Andrew is working on an innovation so revolutionary, that we can't yet give away all the details! His new product can be grated and when toasted, it melts just like tasty cheese! With added cheese flavour (0.1%) it smells and tastes like cheese, and at 99.9% pure potato it contains no fat. Recent taste tests have resulted in disbelief, "NO! That can't be true! It can't be potato!" they say, then continue to eat their toasty. Work on this project is continuing, with current products created using this method stretching from very soft to as hard as Parmesan cheese.
Now Andrew shares his love for potatoes with not only his children, but with millions of others in a market that is ready for healthy and delicious food.
